5 minute chocolate soy mousse

Ingredients
  • 8oz silken tofu (extra firm), drained
  • ¼ cups melted chocolate chips (milk or dark chocolate)
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon vanilla extract
  • ¼ cup maple syrup
  • juice of ½ lemon
  • ¼ cup crystallized ginger
  • 1 cup raspberries
Instructions
  1. Place the first 6 ingredients in a blender and blend until very smooth
  2. Stir in crystallized ginger
  3. Spoon into ramekins and decorate with raspberries.
