Ginger Soy Sauce salmon recipe for kids who hate fish

  • 4 salmon fillets, about 130 grams or 4-5 oz each
  • 4 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons brown sugar
  • 1 tablespoon grated ginger
  • 3 garlic cloves, chopped
  • 3 cups of quick roasting vegetables like courgettes, bell peppers, asparagus, broccoli, green beans, cut into bite-size pieces
  • 2 tablespoons olive oil
  • salt and pepper, to taste
  1. Preheat the oven to 200C/390C.
  2. Mix the soy sauce, rice vinegar. brown sugar, grated ginger, and garlic, in a bowl.
  3. Make a small tray out of foil, just big enough for the fillets, leaving about 1-inch space between them.
  4. Place the salmon into the tray skin down and pour the marinade over the fish.
  5. Turn the fish skin up and allow to marinate for about 15-20 minutes.
  6. In the meanwhile, place the veggies on one side of a regular size baking tray, mix with olive oil and seasoning and roast in the middle of the preheated oven for 10 minutes.
  7. After 15-20 minutes, turn the fish skin down again and brush off the excess ginger and garlic from the top, to avoid burning.
  8. Place the small foil tray with the fish on the regular-sized baking tray, next to the vegetables.
  9. Place the baking tray with salmon and vegetables back into the oven for 7 minutes.
  10. Turn on the grill setting to 260C/500F in your oven.
  11. Place the tray with the salmon and vegetables under the grill for 4-5 minutes. Keep checking after 3 minutes to make sure the fish and the vegetables are slightly caramelized but not burnt.
