Kid-friendly iron-rich lentil salad

Serves: 4-6
  • 2 cups of cooked French or puy lentils (can be bought cooked and canned)
  • 1 small red onion, sliced
  • Juice of ½ lemon
  • Zest of ½ lemon
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • 1 garlic clove, minced
  • 1 cup of cherry tomatoes, halved
  • 100 g (3 oz) feta cheese, crumbled
  • 2 tablespoons cilantro, chopped
  1. Cook the lentils according to the instructions. Cool until slightly warm to touch. If using cooked lentils, just rinse them before mixing them with the dressing.
  2. In the meanwhile, place the sliced red onion into a small bowl and pour the lemon juice over it. Leave to marinate for 10-15 minutes.
  3. Add the lemon zest, olive oil, salt, and garlic to the onion and mix everything together. Pour the mixture over the lentils when they are still warm and mix together.
  4. The salad can be prepped to this point and kept in the refrigerator for 1 day. Make sure to bring it to room temperature before mixing in the rest of the ingredients and serving.
  5. Add the tomatoes, feta cheese and cilantro to the lentils, mix well and serve.
