Thoroughly wash veggies. Peel and slice into strips. Place on baking sheet.
Drizzle oil on top of veggies and mix with hands or spoon to coat.
Roast veggies 10-15 minutes, flipping veggies with spoon half-way. Once veggies are easily pierced with fork, remove from oven and let cool before serving.
